A simple and easy to make meal with the right amount of protein and carbs.
You need:
- Chicken, I used boneless thighs.
- Sweet Potato, cut into bite sized pieces.
- Marinade is: Sumac, Ginger, fennel seeds, Olive oil, Red Chilly and salt.
Pound together all the ingredients for the marinade and taste check. It’s flavor will not change much over the cooking. So you can balance it as per your preference.
Coat the chicken and sweet potato with the marinade and let it stay for some 30 minutes.
Into a preheated oven in a baking dish for at least 40 minutes or till everything is cooked.
