Chicken..of the keto variety.

A large chicken with skin. The one I used weighed almost 2 kilos or 4+ pounds.

Cut into large pieces. In a pressure cooker added butter, green chilies, nutmeg powder, cumin, sesame seeds…actually you can add just about anything you want.

Cook for an hour in a closed pressure cooker without the weight. Keep the heat at low.

Open. The chicken is cooked but it would be better with a crispy skin.

So simply grill it on a buttered grill pan for a few mins on high heat. The pressure cooker will have a lot of liquid collected in it. This is the tastiest part of the dish. Reduce it till the consistency is what you want. Coat the chicken with this just before serving.

Enjoy it all in one sitting….burrpppp or store in the fridge after dividing into normal meal sized portions.
