Lemony Chicken

You Need:

  • Chicken Breast with bone.
  • Lemon Grass, finely chopped, about a tablespoon.
  • Juice of a lemon.
  • Some garlic cloves.
  • A green chilly.
  • Spring Onions, both the root and the stalk.
  • A small piece of ginger.

Pulverize everything except the chicken in a blender. Taste and adjust the salt and heat.

Take a close look at the chicken breast. On the shiny skin side you will notice a white line. Lightly cut into it and open up the chicken breast. Now on the opposite side slice in with the sharp knife.

You will now have a chicken breast that has a a gap created on two sides. Fill in the green paste inside the cavity. Wrap up the breast and seal in the green paste inside it. Let it sit for about 15 minutes.

Heat a grill pan. Drizzle a little oil. Place the chicken breast on the oil. Let it cook for about 7-8 minutes. Sear all sides on the outside of the chicken. When you feel the chicken is almost cooked, remove and keep it aside for about a minute or two. Open up the slits. You will see a little rawness inside. Now return the chicken to the grill pan with the exposed middle on the bottom.

Press in the chicken to sear and cook this at the same time.

After removing from the pan, let the chicken rest for about 5 minutes.

Some lemon as a garnish is most welcome.
