Roasted Chicken and Aubergine

You Need:

  • A couple of pieces of chicken preferably with skin on.
  • A large aubergine, cut into large pieces.
  • A carrot. Skip this if you are into the Keto Diet.
  • A spring onion. The bulbs kept whole, the leaf chopped into 1 cm pieces.
  • Olive Oil.
  • Pepper and any dry seasoning powders or herbs.

Layer the baking dish with olive oil, aubergine, carrot, spring onions bulbs. Cover with the chopped spring onion leaves. Place chicken on top of this green bed.

Sprinkle salt, pepper and seasoning.

Preheated oven at 210 C. Roast at 210C for 20 mins. Then continue baking at 190C for 40 mins. Remove chicken from the pan. Mix vegetables and you will find there is a lot of water collected. Broil with only top heat set at a good 250C for about 5 mins or so.

Enjoy with a cucumber-pomegranate-greek yogurt salad.

Olive Oil, Sour Cream and Whole Wheat Cake

I love to experiment with food. Sometimes they work out, sometimes they are an embarrassment. But they are all a valuable lesson in my food journey.

This is an experiment that was quite good. My strongest critic a.k.a The Wife asked for two extra slices and that means a lot.

There are only portion sizes because I did not measure anything. This is a big issue with baking but sometimes I take the liberty to just eyeball the quantities and it works. Also I would like to emphasize that we should never be afraid of the oven. Its not a big mystery box that punishes any small mistake.

While cakes are best made with Maida, I used Whole Wheat flour. This makes the texture dense but I had no Maida at home and don’t really mind this. If you want a lighter cake use Maida.

Took about 50 grams of sour cream and added 4 tablespoons of extra virgin olive oil. Blended them into a smooth paste:

Then added into this two eggs and the juice of one lemon. Blended this into a smooth airy paste.

Meanwhile took about one cup of whole wheat flour, half a cup of icing sugar and a teaspoon of baking powder. Used to whisk to break up lumps and mix them well:

Combined both the dry and wet ingredients and it resulted in a slightly thick but smooth paste.

Lay this down into a bread tin lined with butter paper. I was not sure about the cake. There was always the fear that it will not come out smoothly but my fear turned out to be unfounded.

Baked for 30 minutes at 180 degrees Celsius and then brushed milk on the top. Baked another 15 minutes and tested by pricking in a tooth pick.

Some icing on this cake would have made it really standout. A little cinnamon powder would have helped elevate its flavor to a different dimension.

But overall am very happy with the end result.

Chicken with Garlic and Olive Oil

Put long deep slits in a chicken breast. Each slit about a centimeter apart. Stuff a lot of chopped garlic and green chilly into it. NO SALT.

Wrap the chicken in aluminium foil and add a good dose of olive oil. The foil must be sealed as well as you can.

Bake for 40 mins at 200 degrees centigrade.

Open and now season it with salt, pepper and any dry herbs.

Grill with the foil open for a few mins to get a bit of browning on top. Be careful that you don’t overcook the breast. The advantage of having the wing still attached to the breast is that even if the breast is a little overcooked you have a serving which is tender. Comes in handy when you have a kid who loves chicken. Enjoy….

 

Cabbage Salad

Wash and dry shredded cabbage. Using a mandoline gives the best results and helps you save a lot of time. A salad spinner will remove all the excess water.

Add pomegranate seeds, chopped green chillies, red onion.

Drizzle balsamic vinegar and olive oil. More oil than vinegar. Like two times more so adjust both accordingly.

Season with salt.

Let the salad sit for at least 10 mins so the flavors can develop.
