Pan Chicken


In a blender just mash up an onion, lots of coriander, some green chilies, garlic pods and salt. Rub this on chicken legs. Massage in some oil and an egg yolk.

Heat a pan, add some oil. Place the chicken legs. Cook on high heat for 3-4 mins. Cook covered for 15 mins on low heat. Keep at it till the chicken is fully cooked. When the legs start releasing oil, the chicken is almost done. Use that moisture to deglaze the pan and finally finish it off on high heat so you get a lovely reddish hue.


Raw Banana and Peas Cutlets


Snip the ends of the raw banana but don’t peel them. Immerse them along with some peas into boiling hot water. Add some turmeric. Cook covered after reducing the heat to low. Five minutes later switch off the stove but don’t uncover them just yet. Let them stay for another 10 mins.

Finely chop lots of coriander and a green chilly. Remove the banana’s and peas and after peeling the banana’s chop them up.

Run this thru a blender and add some besan flour. Season with salt. Mix it well.

Make into cutlets and shallow fry in oil. Do not use high temperatures as that will burn them. Be gentle and enjoy a very tasty and smooth treat.

Steamed & then Grilled Chicken


The biggest challenge with cooking a whole chicken is keeping the breasts soft without leaving the legs raw.

A simple way to get around this is steaming. Now like most normal kitchens, I don’t have a large steamer. But I do have a pressure cooker.

So the first step is to prepare a solution with flavor and fragrance in it.


Take turmeric, cloves, cinnamon sticks, stock powders…. i.e. anything you find in your kitchen will do.

I did not add any salt and will recommend that you don’t add salt either. The finished chicken will be low on salt. But you can eat it with this soup or mustard sauce etc.

Keep any vessel that fits inside the cooker. See to it that the vessel also has the water inside it.

Place the chicken and then cook it on low flame with the lid closed and no weight on it for 45 mins.

Filter the left over sauce and store separately.


Get a grill pan to high heat. Grill the chicken for just 3-4 mins with some butter.

The chicken is already cooked we just want a crispy texture on its top.

Enjoy your super healthy steam cooked chicken.


Sorrel and Chicken


Its a very simple recipe with very little effort.

Melt butter in an pressure pan and once its starts frothing add chicken pieces. Cook on the same medium heat till its browned all over. Remove and keep aside.

In the same pan add a chopped onion and a couple of bunches of chopped sorrel leaves. Use the rapidly releasing moisture to deglaze the pan. Add a little salt.

Once they have wilted add the chicken and close the pan. Do not put the weight.

Keep on high heat till steam appears and then lower the the heat and let it simmer for 10-15 mins. Open and if needed reduce the sauce. But its optional. If you want a five star look, strain the sauce and puree it up.

Enjoy a healthy chukka chicken.

Homemade Cream Cheese with Buttered Zucchini and Broccoli

To make the cream cheese, take warm milk and add lemon juice. Mix and let it stay for 10 minutes. After ten minutes if you are not satisfied with the amount of curdling add a little more lemon juice.

Strain thru a cheese cloth and using only your hands squeeze out as much water as possible. Using a hand whisk keep stirring till it becomes a soft texture. Add a little salt and any seasoning of your choice. I added chat masala.

Cut Zucchini and Broccoli and rub butter. Grill on a hot pan. First the broccoli and then when its tender add the zucchini.

You can dilute the cream cheese with a milk or cream. Or like me use it like a thick spread.

Beets, Fenugreek with Chilly


Just a off beat combination that works in a surprisingly good way.

The bitter fenugreek leaves meet green peppers and complimented by sweet beetroots.


Heat sunflower oil. Add a few drops of coconut oil for the flavor. Add the chilies and cook on high heat. Two mins later add the chopped fenugreek leaves. Once they dry up in the high heat, add the beets. Continue the high heat as we don’t want them to cook by boiling.┬áIn just 2-3 mins the dish is ready. Season with salt.
