Figs and Radish Salad

  Use a madoline to thinly slice the radishes. Cut fresh figs into 5 mm thick discs. Celery leaves, green chilly and walnuts give it some more variety. Brown Rice with Spring Onions.

Had a big bunch of spring onions, which I needed to finish. So this simple brown rice dish becomes my lunch for today. Use a thick bottom dish with a lid. Chop the spring onions into two parts. Cabbage Salad

Wash and dry shredded cabbage. Using a mandoline gives the best results and helps you save a lot of time. A salad spinner will remove all the excess water. Add pomegranate seeds, chopped green chillies, red onion. Drizzle balsamic vinegar and olive oil. More oil than vinegar. Brown Rice with Mint and Olives.

Wash the rice but don’t soak it. Saute thin slices of an onion in butter and oil. Remove half and keep it for later. This helps with texture. Add the rice and saute till the raw smell is gone.
