A return to my recipes that need no recipes.
Used a whole Mullet Fish. I ran my sharp knife and cut thru the middle bone. This opened up the fish like a butterfly. It also allows for a much better cleaning of the insides.
Sprinkled salt all over the fish. Do not over salt.
Stuffed the cavity with a lot of chopped garlic, coriander and chilly. Drizled a little Olive oil. Closed the fish and kept it in a glass baking dish with the back facing upwards.
Sliced an orange into rings. The two corners, which are mostly just the rind, squeezed them to extract the juice and discard the remaining. The other slices placed around the fish.
Baked at 180C for 30 mins. Used just the top heat for another 5-6 minutes at 200C.
