- Ragi or Finger Millet Flour : 200 grams.
- Whole Wheat Flour : 300 grams.
- Honey : 30 grams.
- Milk Powder : 30 grams.
- Vital Gluten : 30 grams.
- Salt : 10 grams.
- Yeast : 7 grams.
- Luke Warm Water : 300 grams
Combine all the ingredients and leave it for about 30 mins. This step ensures a good hydration of the flour. Knead for about 20 minutes and check for the window pane test.
Rest till doubled. Shape and rest till it’s ripe.
Bake at 180C in a preheated oven for 30 mins. A milk wash before putting in the oven and a butter rub after it comes out will ensure a tasty crust.
