Cinnamon Swirl , Whole Wheat Bread

The smell of freshly baked bread is like the entrance to heaven. Add in cinnamon and it becomes like heaven.

The bread dough is my fairly standard one:

  • 500 grams of Whole Wheat Flour.
  • 30 grams of Vital Gluten.
  • 50 grams of Honey.
  • 50 grams of vegetable oil.
  • 10 grams of salt.
  • 8-10 grams of yeast.
  • Water depending on weather can range from 350 to 400 grams.

The Cinnamon Filling:

Combine together powdered cinnamon and sugar. Taste and balance it. Add in 2-3 teaspoons of all purpose flour.

An egg wash to let this adhere to the inside of the bread.

Combine all the bread ingredients and knead till it passes the window pane test. Let it rest until it doubles in size. Then roll it into a thick rectangle. The width should be such that it will fit inside the baking pan.

Spread the egg wash. Let it soak in for a minute or two and then sprinkle the mixed cinnamon and sugar powder. Roll it up. Put in a parchment covered bread tin.

Let it rest for at least 40 minutes.

Give a milk wash. Bake at 180 C till the inside is at least 190F.

Let the bread completely cool before you slice it.
