A breakfast that is full of complex carbs and perfect protein.
- Sweet Potato, cut into small pieces.
- Turmeric powder.
- Chilly powder.
- Coriander powder.
- Any chopped greens like coriander or dill.
- Eggs, cooked as per your choice.
Combine the sweet potato pieces with the oil, turmeric powder, chilly powder, coriander powder and salt. There must be enough oil for all the pieces to be lightly coated in it. They should not be drenched in it.
Cook covered on low heat till the sweet potato is soft. If the pan was not very crowded this will not take more than 10-12 minutes.
Cook uncovered at slightly higher heat to get some crispiness on the potatoes.
