Red Snapper

One more in my series of recipes that don’t need recipes.

I got a beautiful Red Snapper that weighed just a little under 1 kilo. Made slits and rubbed in a paste made with lots of garlic, green chilly and salt.

Used a large non stick that has a lid.

Heated mustard oil and carefully placed the fish in it. Cooked on medium heat till the fish is able to let go of the pan without using force. Flipped it over and covered the pan and let it cook on low heat for 10 mins.

Open the lid and add a few pieces of butter. This butter will melt and lubricate the space between the fish and the pan. This will also free up the fish. Cook till the slits are opening up. Don’t forget to sear the top of the fish as well.
