Cheese Babka

The Dough:

  • All purpose flour : 450 grams.
  • Egg : 1
  • Butter : 45 grams (10% of Flour)
  • Milk : 175 grams
  • Sugar : 20 grams.
  • Yeast : 7 grams
  • Water as needed.

Filling:

  • Grated cheese.
  • Seasoning.

Combine all the ingredients for the dough except the water. Knead it. It will most probably be dry as the amount of wet ingredients is less. Add a tablespoon of water at a time and keep kneading. The dough should be soft, bouncy and must pass the window pane test. Let it rest till it doubles in size.

Roll the dough into a thin rectangle about 3-4 mm in thickness. Sprinkle cheese and seasoning all over the rectangle but leave 2 inches as a border. Roll into a log. Cut it horizontally. Braid it. There are a lot of videos in youtube for reference.

Put it into a buttered bread pan. Second rise till the dough has grown and is soft but holds an impression when very lovingly pushed.

Glaze with milk. Bake at 180C in a preheated over for about 35 minutes.

Let it cool before slicing. But this is a luxury you may not have with a hungry family screaming at you.
