Mushroom Pepper Noodles

Some tips on how to cook noodles at home.

You Need:

  • Mushrooms.
  • Garlic.
  • Onion.
  • Lots of freshly ground pepper.
  • Tomato Paste.
  • Noodles.
  • Butter.
  • Salt.

The noodle packet will tell you how much time it will take to cook them in water. Make a note of that. Usually its under 5 minutes and more like 2-3.

We will build the flavors in a pan. Then add the cooked noodles into it and give a couple of minutes for them to soak it all in.

To save time use a mandoline slicer. Run the onion, mushrooms and garlic thru it. So you have them all cut in the exact same thickness. The exact amount of each does not matter in the least. In fact you can go ahead and use other ingredients like carrots, capsicum, peas, shredded chicken or shrimp.

Melt butter. Sauté the garlic for a min. Then add all the other cut up vegetables. Season with salt.

In a separate pan, start heating water for the noodles. By the time our main ingredients are ready the water will come to a boil and we will have hot and ready noodles.

Use high heat to cook the vegetables. When they start getting a little caramelized, lower the heat and add a teaspoon of tomato paste. You can also use tomato ketchup as both a replacement or an additional ingredient.

Sprinkle the freshly ground pepper. Add in a little red chilly flakes if you like it more spicy.

As soon as the noodles are cooked, add them into the vegetables along with about half a cup of that starchy water they were cooked in. This will provide the glue for the vegetables to adhere to the noodles.

Get back to high heat and dry up the water.
