
Very few people wake up to a phone call from their fish monger. I am quite lucky in that respect and his call usually means there is something special. When I went to pick up the special something, I found these beauties as well. Told him to just pack it up as I would like to clean them myself. Its a very relaxing thing to do. Because these prawns are a little larger in size, they need to be marinated for a couple of minutes. Thirty minutes are usually adequate but a little more is also good.
Marinade for the approximately 1 dozen prawns:
- A cup of roughly chopped garlic.
- A half cup of olive oil.
- A teaspoon of chilly flakes.
- A teaspoon of roasted cumin and coriander powder.
- A little red chilly powder for the color.
- A little turmeric powder because its a habit.
- Salt.
You will also need some butter, the juice of a lemon and lots of chopped coriander. But this is for later.
I highly recommend tasting the marinade before its applied to the prawns. This will allow you to balance it as per your preference.
Melt butter in a largish pan. When its just starting to brown add all the prawns along with the marinade. Let them cook undisturbed on high heat for at least 6-7 minutes. When the color starts turning red, add the lemon juice and coriander. Continue cooking on high heat till they are done.
