Started missing a nice Shawarma so simply made a couple of them for dinner. This is such an easy recipe, you will want to try it out for sure.

You Need:

  • A good chunk of boneless mutton. Preferably from the leg or shoulder.
  • Peeled Garlic. About 100 grams.
  • Black Pepper.
  • Tailed Pepper.
  • A dry red chilly or two.
  • Salt.
  • Water.

Make a paste of garlic, pepper, tailed pepper, dry red chilly and salt. Its best if you use a mortar-pestle. Taste and adjust accoridngly.

Rub and massage this into the meat. Marinate in a fridge for a couple of hours.

Put the meat in a cooker. Add a cup of water. Cook on high till the first whistle. Then reduce the heat and cook on simmer for about 20 minutes. Do not overcook the meat as that will result in it becoming a mash.

When the pressure has subsided, open the cooker and cook on high heat. While this is happening, using a sharp knife and a fork, start cutting the meat into strips. Be very careful as there is a some risk of burning your fingers or wrist or elbow. When the water had all dried up and the meat pieces have taken a beautiful caramelized texture, its done.

Assemble the meat along with chopper cucumbers, tomatoes, olives and any mayonnaise of your choice. Best is to bake a couple of fresh Pita breads as they make the perfect pocket for this.
