
This lock down forces every home cook to improvise and make the best of what is available. I found a bunch of burger buns and frozen Basa fillets at a super market. My family loves fish and kids have been missing burgers So a fillet-o-fish, it is for dinner.
You Need:
- Any White fish fillets.
- Pepper.
- Salt.
- Lemon Juice.
- Potato Starch or Corn Starch.
- Oil for frying.
Combine the salt and pepper. Taste and adjust it. Rub it over the fish along with lemon juice. Let it marinate for about 20-30 mins. Avoid marinating it for longer than that as the fish will start dissolving in the acid.
Rub the starch all over the fish and let it sit for about 5-6 minutes.
Pan fry on low to medium heat. Basa is notorious in its ability to soak up the marinade and this will cause splattering when it cooks. Lower heat will help avoid that. This is also the reason to prefer potato starch over corn starch.
Gently toast the burger buns. Layer it with mayonnaise, preferably mint flavored. Some slices of cucumber, tomatoes and cheese. The fish taking the middle place of honor.
