
An Old Favorite.
You Need:
- Chicken.
- Carrots.
- Black Pepper.
- Coriander Seeds.
- Fennel Seeds.
- Garlic.
- Olive Oil.
- Lemon Juice.
- Salt
Pound all the ingredients except the chicken and carrots in a pestle. Taste and adjust accordingly. Marinate the chicken in this for a couple of hours in the fridge.
Mix in the carrots and roast everything together in a oven. Ideal temperature is 200C for about 25-30 minutes. After 15 minutes, mix it up so the juices spread all over the carrots and chicken. Give an extra 5-7 minutes with only top heat at around 220C.
