Banana Cake

Think of it as a three bowl recipe.

Bowl 1:

  • Melted Butter 110 grams.
  • Sugar 140 grams.
  • 1 Egg.

Bowl 2:

  • 2 ripe Banana’s
  • 1 Teaspoon Vanilla Essence
  • 1 teaspoon cinnamon or nutmeg powder.

Bowl 3:

  • 200 grams of All purpose Flour.
  • 1 teaspoon baking powder.

Method:

Whisk together the butter and sugar till the sugar is almost dissolved. Add in the egg and whisk till its fully mixed.

Mash together all the ingredients in bowl 2. Then combine bowl 1 and 2 and whisk well. The consistency will look like its curdled. Its expected to look like that because the water and oil don’t mix. Also it does not matter if you over worked it. Its better to have mixed well than mixed less.

Combined all the ingredients in bowl 3. Then add half of it into the combined wet ingredients. You must be careful with this part of the mixing. Do not whisk or beat it. Use a spatula to gently fold in the flour. Work it as less as possible. Add the remaining flour and fold it all in till no dry ingredients are discernible.

Put the batter into a baking dish which has a buttered base with a parchment paper lining on it.

Bake in a preheated oven at 180C for about 40 mins and then check if its done.

Walnuts sprinkled on top before baking is a nice touch.
