
Sardines with very less oil.
You Need:
- Sardines.
- Coriander leaves and stems.
- Garlic.
- Mustard oil.
- Black Pepper.
- Lemon Juice.
- Salt.
This recipe is simple and uses a method I call as cold frying.
In a pestle pound together the garlic, black pepper, salt and lemon juice. Add in a tablespoon of mustard oil. Mix it well and rub this all of the the fish. Leave aside for ten-fifteen minutes.
Take a heavy bottom fry pan. Spread out the fish and all its marinade on it. Then keep it on the stove and cook on low heat for about 8 mins. The combination of lemon juice and mustard oil would have made a very thick slurry kinda paste.
This will allow the fish to cook without sticking to the pan. When the fish is almost cooked, increase the heat and get just a lil bit of browning on the fish.
Remove the fish and masala as well.
