Roasted Mackerel

My favorite fish prepared in my favorite way.

You Need:

  • A Mackerel.
  • Thinly sliced onion.
  • Chopped Garlic.
  • Chopped Green Chilly.
  • Extra virgin olive oil or cold pressed sesame oil.
  • Any vegetables.

The fish must be completely clean. Not even a sliver of the inner black stomach lining must remain. This is extremely important.

Stuff the sliced onions, garlic and green chilly inside the stomach cavity.

Line a baking tray with foil. Place the fish on top of it. Since there will be a lot of real estate left on the tray, place some vegetables. I used cauliflower, bell peppers, potato, onion and even a tomato.

Drizzle oil over everything. Roast in an oven at 180C for 30 minutes.

When cooked lightly lift the fish from its tail end. If the meat starts to separate from the bone, its done.
