A simple keto meal.
- Chicken Breast.
- Any generic chicken masala.
- Brinjals, quartered.
- Turmeric powder.
- Italian Seasoning.
- Paprika for seasoning.
- Lemon juice.
Rub the masala and oil on the chicken.
Brinjal usually has a slight bitterness. To remove this rub some salt and turmeric on the sliced brinjal pieces. This will leech out the bitterness.
Heat a pan and place the chicken on it. Wash the brinjal under running water to remove the excess salt. Put them around the chicken. When the chicken has a crust forming on its edge, lift it up. Spread the brinjal pieces and replace the chicken on top of the brinjal.
Sprinkle Italian seasoning. When the brinjal pieces have softened completely that its possible to just mash them using a spoon, the cooking is done.
Let it cool.
Puree the brinjal along with lemon juice, paprika and American mustard. Adjust seasoning as appropriate.
