Five Spiced Bottle Gourd

A simple healthy low carb dish.

You Need:

  • Grated bottle gourd. Do not squeeze and remove its water.
  • Panch Phoran, two teaspoons.
  • Pepper powder as per taste.
  • Beaten Curd about half a cup.
  • Turmeric powder, a pinch.
  • Salt.
  • 2 teaspoons of Ghee.

Panch Phoran is a Bengali spice mix usually available in supermarkets. It is a combination of methi (fenugreek seeds), nigella seeds, rai (mustard seeds), fennel seeds and jeera (cumin seeds).

Heat ghee and saute the Panch Phoran along with turmeric powder. When the seeds start crackling add the grated bottle gourd. Mix it well as its important to prevent the seeds from getting stuck between the pan and the bottle gourd as this will cause them to burn.

Cook on a low heat and keep stirring occasionally. Sprinkle salt and pepper.

When the bottle gourd is almost cooked stir in the beaten curd. Mix well. Cook on a slightly higher heat to reduce the consistency to almost no water.

Garnish with coriander or serve as is.
