
While cleaning this beautiful fish, a thought came to my mind. Why does this need even a drop of oil.
You Need:
- Mackerel, split lengthwise into two.
- Chilly Flakes.
- Finely cut Ginger.
- Lemon Juice.
- Salt.
Wash and pat dry the fish. Season the skin side with salt and let it sit out for about 15-20 mins. This will let the salt dissolve into the skin.
Get a heavy non-stick pan to good heat. Place fish skin side down. Keep the heat to about medium or so. Sprinkle the chilly flakes on top of it.
In about 4-5 mins the fish would have started changing in color. When the color has changed for almost all of the fish, flip it over. Do this carefully so that the skin is not destroyed. If you encounter resistance then simply relax and try again after a minute.
After flipping it over, sprinkle the ginger on top of the fish. It will be cooked in another 3-4 minutes. Carefully lift the fish using a spatula and inspect from below to see if its done. Do not over cook otherwise the fish will become dry and tasteless.
Remove and drizzle lemon juice all over the fish. Sprinkle some more chilly flakes.
