A nice week day treat for my daughter.
Prepare an assembly line.
- Use slightly larger prawns. Pat them dry.
- Corn flour in a plate.
- Whole egg beaten in a bowl.
- Bread crumbs with your spice mix in a bowl. My spice mix was oregano, chilly flakes and garlic salt. Adjust salt and heat as per your taste. This must be dry so do not add any liquids.
Use chopsticks. Pick up a prawn. Coat it with corn flour. Then dip in the egg bath. Then cover with the seasoned bread crumbs. Deep fry. Use high temperature when adding the prawns. Give them a minute. Then reduce the heat so that the coating does not burn up. The prawns will take approximately 8 minutes to get cooked. Give it a little high heat towards the end.
