Baked Fish in Foil

Keto meal which is incredibly easy to make.

You Need:

  • White Pomfret. Put a couple of slits in the flesh.
  • A zucchini cut into long strips.
  • Lots of chopped coriander.
  • Chopper garlic.
  • Olive oil.
  • Some chilly chopped up. Red will look pretty, green will work just fine.
  • Lemon juice.
  • Aluminium foil.

Combine coriander, garlic, chilly, olive oil and lemon juice. Taste it and adjust seasoning and heat as per your preference. It will not undergo much change as it cooks. So what you get now is what the final dish will taste like.

Trim the fish tail and fins so that there are no sharp corners. Spread out the aluminium foil. Place two strips of zucchini in the center Put some of the mixed greens on top of it. Place fish. Put some more of the coriander mix. Put zucchini strips on top. It must look like a sandwich with fish between coriander mix, which in turn is between zucchini strips.

Now fold up the aluminum foil as if you are gift wrapping the fish and zucchini.

Into a pre-heated oven at 180C for about 20 minutes. Then open the foil wrap and give it another 20 minutes in the oven. Actual cooking time will vary depending on the fish size. This was the time used for two packets of pomfret weighing about 350 grams each.

Let it cool for about 5-6 minutes before serving.
