This is one of those few recipes that I post where a warning is needed. There will be splatter and you will need to clean the kitchen once done. So don’t try this when tired or in a rush.
You need:
- Chicken, preferably the legs or thighs with bones.
- A table spoon of ginger and garlic paste.
- A table spoon of honey.
- A table spoon of vinegar.
- A teaspoon of soy sauce.
- A table spoon of cornstarch.
- Paprika.
- Sesame seeds.
Combine all ingredients except the chicken and starch. Taste and adjust the seasoning accordingly. A little salty is fine.
Make slits on the chicken. Rub in the combined sauce. Add in the cornstarch and massage it in. Leave it for a couple of minutes.
Sprinkle sesame seeds on the chicken. Let them coat it. Don’t bother with making it an even distribution.
Pan fry the chicken. Be careful. There will be some splatter. Keep the heat a little under medium to avoid burning the honey and soy. They will caramelize.
When the chicken is almost done, prop it up against the sides of the pan. Sprinkle some sesame seeds. Using a spoon, take the hot oil and drizzle it over the chicken. This will crackle the freshly added sesame seeds.
