Kid’s favorite.
You need to set up an assembly train in the following order:
- Chicken breast, cut into thin strips.
- A plate with flour, seasoned with salt. I used garlic salt for extra flavor.
- A bowl with whisked eggs.
- A plate with breadcrumbs, grated Parmesan and any spice. Taste and adjust flavors.
Take a single chicken strip. Dab it all over the flour till it looks like a model in a fairness cream advertisement. Dip it in the egg. Now into the plate with breadcrumbs..
Heat oil. Drop a breadcrumb into it. The oil should be hot enough that the breadcrumb starts bubbling but not hot enough for it to split and splatter.
Cook the chicken strips without overcrowding the pan. Use medium heat. Take care that the chicken gets cooked but the coating is not burnt. Usually 3-4 minutes per side is more than enough.
Let the chicken rest for at least 5 minutes after removing from the oil. Slice one of the pieces to check if its fully cooked. If chicken has a little eggy smell, then give the next batch an extra 2 minutes. Do this check before giving the pieces to kids.
