Crunchy Beans


A simple crunchy snack.

You Need:

  • French beans, cut into about 1 cm long pieces.
  • Carrots, cut into small pieces.
  • Garlic, chopped up.
  • Some cumin and mustard seeds.
  • Freshly ground pepper.
  • Grated coconut.
  • Any aromatic oil like mustard or coconut oil.

Get water to a boil. Add in the beans. Let them boil away at medium heat for about 3 or 4 mins. Take out a piece and bite it. It must have no raw taste in it but still have a good amount of resistance to your bite. Drain and keep aside.

Heat oil and saute the garlic, cumin and mustard seeds. If you want add in any other aromatics as well. Drop in the carrots. Mix well. Season with salt and pepper. Add in the blanched beans. Stir and cook on high heat. Its done when both the carrots and the beans have acquired a nice shine on them. Sprinkle the grated coconut.
