Baked Salmon and Zucchini : For Newbies

Continuing my cooking series for when you want something really good but are either hard pressed for time or are just starting out on your cooking journey.

You Need:

  • A slice of Salmon.
  • Zucchini, cut into rings. Each ring a little less than a centimeter thick.
  • Italian Seasoning. Don’t buy powde, instead get something which comes in a grinder.
  • Freshly ground pepper.
  • Some cherry tomatoes are optional.
  • Extra virgin olive oil.

Take a glass baking dish. Pour a little olive oil into it. Spread out the zucchini rings. Rub them into the olive oil and flip them over. This ensures both sides get oiled up.

Grind the Italian seasoning. Be generous with it. Place the fish on top of the zucchini rings. Drizzle a little olive oil on the fish. Grind in some more seasoning and also sprinkle some salt and pepper.

Cover the dish with foil. Into a preheated oven at 190C for a total of 30 minutes. The first 20 of which will be covered. The next ten will be uncovered with heat only from the top burner.

This allows the fish to get cooked in the trapped steam when it was covered. Then there will be moisture collected in the dish. When you use only the top heat and leave it uncovered, that moisture will dry up.
