Simple, healthy and vegan.
- Sprouted Green Mung Beans.
- Onions Chopped.
- Bell Pepper Chopped.
- Freshly Ground Pepper.
- Sesame oil.
Warm up some sesame oil and saute the onions in it. Do it at moderate temperature. The onions just need to soften up and lose a bit of their heat. Add in the mung beans. Saute till they also get softer. Season with salt.
Add in the bell pepper and sprinkle in lots of pepper. Mix well. Put spinach leaves. Let them warm up a little and then after switching off the heat, stir them in. Let the residual heat wilt the leaves.
Serve warm or at room temperature. Its a great lunch in its own way.
