- Mackerel. Fillet the fish.
- Mango Ginger. You can use regular ginger but that is usually a lot more fibrous.
- Garlic chopped up.
- Green Chilly Chopped up.
- Olive oil.
Spread out foil on a baking tray. Put a few drops on olive oil on the spot where you will place the fish. Keep one part of the fish. Put the mango ginger slices, garlic and green chilly. Cover with the fish. Lightly rub some olive oil on top.
Into a preheated oven at 180C for 18 minutes. At 15 mins mark, open the fish slices and uncover the middle. Only top heat for about 3-4 mins.
