I love carrots and baby carrots are simply the best.
- Baby Carrots.
- Broccoli Florets.
- A little olive oil.
- Any protein. I used a small piece of salmon, grilled with salt and pepper.
Simply scrape them a little with a knife to get rid of the drier outer skin. Melt some butter. Add in a little olive oil. Drop in whole pieces of garlic. Saute for a minute or two. Spread out the baby carrots. Take care that you do not crowd them up. Initially keep the heat a little high but eventually taper it down. Protect the garlic by keeping them on top of the carrot pieces.
Make some space for the broccoli florets. Cook them along side the carrots. Liberally sprinkle freshly ground pepper.
When the broccoli is bright green, its done.
Serve with any grilled or roasted protein.
