Something that will seriously wow your family.
- Two large beetroots, cut into thin discs
- Feta Cheese, crumbled.
- Coriander leaves.
- Garlic Cloves.
- A green chilly.
You can do this either in an oven or using a grill pan. I used a grill pan. Heat it up. Spread out the beet discs. Do not stack them. Spread out the garlic cloves and the whole green chilly as well. You will most probably not be able to put all the beet discs at once.
Grill them on high heat but take care to avoid burning them or the garlic. Turn them around. If the garlic feels like its getting too dark, remove. Stack the grilled beets into a corner and add in the remaining discs.
The discs will shrink in size. Keep them on the grill pan and let them continue to cook on a low heat. Turn them around occasionally. Its a sturdy vegetable and you don’e need to pay it a lot of attention.
Remove when you are satisfied or about 20 mins on low heat. Let them cool completely. Meanwhile chop up the green chilly.
Spread out the beet disc and add in the crumbled feta, garlic and chilly with some fresh coriander leaves.
Note that Feta has a lot of salt in it. So do not season with anything else.
You can add in more things like toasted walnuts or almonds as well.
Roll them up and enjoy.
