I was staring at this crab for a good 5 minutes before I came up with an idea on how to cook it!
Then I called up my mom who refined it and made it go one level up.
Don’t ask the fish monger to clean and crack the crab. Bring it home and do it yourself.
You Need:
- Crabs. I used just one monster that weighed about 500 grams.
- Turmeric powder.
- Pepper powder.
- Green Chilies.
- Butter
- Fresh Coriander, chopped up.
Clean the crab by removing the top shell. Don’t discard the top shell but let it be part of every step. It will provide a lovely visual treat when serving the crab.
Separate the claws. Remove all the gills and other unnecessary stuff inside it. Using kitchen shears, make a long incision along the claws. This will allow the spices to get inside the claw and into the meat.
Get a lot of water to a boil. add the turmeric, pepper powder, green chilies and salt. Stir it well. Add the crab. Cook on a gentle boil for about 8-10 minutes.
Remove the crab and drain all the water. Let the crab steam out for about 4-5 mins while it sits in a colander.
The coriander must be completely dry before the next step.
Melt butter and then saute coriander in it. Some garlic is optional. Add the crab into it and mix well.
Serve.
The star of this dish will be the sweet flesh of the crab with just a hint of spices and the freshness of coriander.
