The 11 O’Clock is the most dangerous time for anyone trying to eat healthy and control their portions. Breakfast was a couple of hours back, Lunch is still some time away. So with every passing second, the bag of chips or biscuits starts looking more and more attractive.
Here is a colorful and super healthy snack that is not only guilt free but Vegan as well.
You need:
- A large sweet potato.
- 2 tomatoes, ripe but not quite.
- Shallots, peeled.
- A few slices of ginger.
- A few drops of mustard oil.
- Fresh Coriander.
- Salt and Pepper.
Slice the sweet potato, vertically. So you have two long pieces. Take a few drops of mustard oil in your palm. Rub this all over the sweet potato.
Heat a heavy girdled pan. Place the sweet potato in it. Now take some more mustard oil in your palm and rub it over the shallots. Drop them beside the sweet potato.
The tomatoes must be whole. The skin must have no tears as this is also going to get roasted. Keep them in the hot pan. Drop in the ginger slices as well.
Keep the heat high so we can char everything. Only the sweet potato is going to take time to cook.
When you are satisfied with the others, remove them from the pan and keep aside to cool them off. Then chop them up along with fresh coriander.
Reduce the heat while the sweet potato cooks. Its done when you can stab it with a knife without encountering any resistance.
Sprinkle salt and pepper.
