This is without any doubt the best pumpkin dish, I have ever eaten.
- Pumpkin : 200 – 300 grams, grated.
- Cabbage : 100 grams, chopped up.
- Fennel Seeds : 1 teaspoon spoon.
- Coriander Seeds : 1 teaspoon.
- Red Chilly Powder : 1 teaspoon.
- Almonds : Sliced.
Heat a tablespoon of butter. Saute the fennel and coriander seeds. When fragrant add the pumpkin and cook till its fully softened. Add in the cabbage. Use the coarseness of the cabbage to further break down the pumpkin. Till you are left with an extremely ugly mess in the pan of cabbage pieces covered in pumpkin paste. Season with salt and red chilly powder. Taste and check the seasoning.
Let it cool. Puree in a blender, add milk to get the right consistency. Spread out the puree into a bowl.
Melt some butter. Get it hot. Then fry almonds. Temper the puree with these hot fried almonds and butter.
