Ash Gourd with Manathakkali Seeds

If you know Tamil Cuisine, then you would know Vathal Kuzumbu. Manathakkali Seeds are an essential ingredient in it. They have a very interesting mix of flavors. A bit of bitterness is prominent but they also have a nice sourness in them.

So I paired them up with Ash Gourd and carrots.

You Need:

  • Ash Gourd, about a cup. Cut into small pieces.
  • Three Carrots. Two grated and once thinly sliced.
  • Manthakkali Seeds, about a tablespoon.
  • Cumin Seeds, a teaspoon.
  • Ghee, about a tablespoon.

Heat ghee. Saute cumin and Manathakkali Seeds for a minute or two. Add the ash gourd. Cook on low heat till the ash gourd is almost done. Season with salt. Add the carrots. Mix well.

Serve warm or cold.
