Baby Corn in Garlic Roux

You Need:

  • Baby Corn : Cut into bite sized pieces.
  • Garlic : as many cloves as you want, cut into small pieces.
  • One teaspoon of butter.
  • One teaspoon of flour.
  • 12 teaspoons of milk.
  • Red Chilly Flakes or freshly ground black pepper.

Heat a pan. Toss in the baby corn and let them get toasted on medium till. Stir once in a while. When they have taken on a nice golden color, remove and keep aside.

Melt butter in the same pan. Fry the garlic in it. When the raw smell is gone, add the flour. When the raw smell of the flour is gone, add the milk, a couple of teaspoons at a time. Keep stirring and keep the heat less than medium. Stirring will avoid the formation of lumps.

Season with your chosen spice and salt. Add the toasted corn. Mix them well.
