Lemon Butter Chicken Pasta

You Need:

  • 250 grams of Pasta. Follow instructions on the pack. Save half a cup of the starchy water.
  • Chicken.
  • A teaspoon of paprika.
  • Butter about 50 grams.
  • Chopped up Garlic, about a tablespoon.
  • An onion, finely diced.
  • Some coriander.
  • The rind and juice of a large lemon.

Saute the chicken with just salt and paprika. When its cooked, remove from the pan and add butter into the pan. When the butter has melted, add the garlic and onion. Saute them till the raw smell is gone and they have softened completely. Add the lemon rind and juice. The sauce will immediately change in its texture and color. Add the pasta and the starch water. Mix well. Add the chicken into it.

After mixing well, cook for about 5 mins. Garnish with fresh coriander. Cover the pan and switch it off. Leave it for about 10 mins for the pasta to soak in the sauces.
