Super healthy and incredibly easy recipe. I used mustard sauce, but you can swap it with any condiment of your choice.
- One Zucchini, sliced into rings.
- One chicken breast.
- A tablespoon of Olive oil.
- Any condiment : Two tablespoons or so. I used American mustard.
Arrange the zucchini rings on the base of a glass baking dish. Drizzle olive oil. Add the condiment. Place chicken on top. Mix them a little, so everything is evenly spread out.
Highly recommend that you cover the dish with some parchment paper.
Bake at 190C for 30 mins. Remove the parchment and give it another 5-6 mins with only top heat at a slightly higher temperature.
After removing from the over, let it rest for at least 5 minutes before serving. Grate some cheese on top of the chicken.
