Chicken, Potato and French Beans

You Need:

  • Two Boneless Chicken Thighs.
  • Couple of French Beans.
  • Potatoes, peeled and cut into 1 cm thick rings.
  • Any seasoning mix of your choice.
  • Oil preferably something with flavor like Mustard oil.
  • A tablespoon of butter.

Coat the chicken with any seasoning of your choice. Add a little oil to it. Keep aside.

Bring water to a boil. Season with salt. Add the french beans. Cook on medium heat till the beans are cooked. Drain and keep aside.

Heat a thick pan. It must have a lid. Put the chicken into the pan. Coat the potatoes with the seasoning left behind in the dish you stored the chicken in. Cook on medium to high heat. Once the chicken has browned, flip it over. After 3-4 mins, push the chicken to a corner. Place the potato slices. Spread them out. Keep the chicken on top of the potato slices. Put beans on top of the chicken. Cover and cook for about 10 mins on low heat.

Open and add the butter. Cook on high heat till all the butter has melted and browned everything beautifully.

Needs no accompaniments. This is a well balanced meal in its own way. Enjoy.
