Ash Gourd


Ash Gourd is a highly under rated vegetable. It has a lovely texture, cooks really fast and acts as a sponge for other flavors. There are no quantities mentioned in this recipe because its not important.

You Need:

  • Ash Gourd, peeled and cut into small pieces.
  • Lots of coriander leaves and stems, finely diced.
  • Green chilies, chopped.
  • Ginger chopped.
  • Coriander seeds, cumin seeds, onion seeds, fennel seeds, fenugreek seeds.
  • Coconut oil.

Heat coconut oil. Saute the green chilly and ginger. Add in all the other seeds. When they are fragrant add the ash gourd. Cook on low heat for 5-6 mins. Add the coriander. Cook on medium heat till the Ash Gourd is cooked. You know its cooked when you can slice it easily. To double check, simply eat a piece.
