When you have no time but want to eat super healthy.
- One small head of cabbage, cut into small pieces.
- One chicken breast, cut into 3 or 4 pieces.
- One sliced tomato.
- Any seasoning of your choice. I used my favorite Banne Nawab Tandoori Mix.
Spread out aluminium foil on a baking tray. Spread out the cabbage. Rub the seasoning on the chicken. Place it on the cabbage. Sprinkle some more seasoning on the cabbage.
Roast at about 190C in a preheated oven for about 30 mins.
Remove the tray. Keep the chicken in a a plate. Once its safe to touch, pull up the foil and carefully empty the cabbage into a bowl. Mix it really well so the seasoning covers all of it. Add in the chicken into the bowl and continue mixing.
Add in a thinly sliced tomato.
Serve hot or cold. It tastes great on its own.
