You need:
- Half a puff pastry sheet.
- Two Bell Peppers. One yellow and one red. Thinly sliced.
- A tablespoon of Olive oil.
- A teaspoon of seasoning.
- A teaspoon of chilly flakes.
- Two cheese slices.
Lay out the sheet on parchment paper. Fold about half a cm on all corners to make a small boundary wall.
Arrange the pepper slices taking care to not stack them on top of each other. Be creative in the pattern. Drizzle olive oil and sprinkle salt, seasoning and chilly flakes.
Into a preheated oven at 200C for about twenty minutes. You can glaze the edges with egg wash for browning but it looks fine without that as well.
As soon as you remove from the oven, put the cheese slices on top of the peppers. Let them melt in because of the residual heat.
Enjoy a simple treat.
