Its Ramzan and so I needed something light and healthy for the early morning Seheri. Paired the super easy to digest Zucchini with the chicken for a yummy meal.
You Need:
- One Zucchini, cut into long strips.
- 300 grams or so of chicken. I used two pairs of wings.
- 1 onion chopped up.
- 3 tomatoes, chopped up.
- 3 dry red chilies.
- A tablespoon of ginger and garlic paste.
- A little turmeric powder.
- A teaspoon of red chilly powder.
Use a thick bottomed pan with a lid or a pressure cooker with out the weight.
Heat oil. Saute the onions till they are translucent. Add in the the ginger garlic paste and cook out the raw edge. Add the tomatoes, turmeric, salt and red chilly powder. Saute till oil separates. Mix in the zucchini and chicken. Stir till they are well coated in the masala.
Close the cooker. Do not place the weight on it. A minute on high heat and then it simmer on low heat for about 20 minutes.
Open and cook on high heat to dry it up.
Garnish with nuts, I used pecans but almonds will also work.
