Amaranth Seeds with Broccoli and Chicken.
- Amaranth Seeds : About one cup.
- Garlic Paste : At least 2 Tablespoons.
- Red chilly powder as per taste. A teaspoon should do.
- Turmeric powder, about a quarter teaspoon.
- Pepper powder.
- A tablespoon of butter.
Rub garlic paste, chilly power, salt and turmeric on chicken. Coat it evenly. Carefully add the chicken into hot oil and let it saute.
In the now empty dish where you mixed the the chicken add broccoli florets. Add a little more garlic paste and rub it in. When the chicken is almost done, add the coated broccoli florets into the pan.
Meanwhile start boiling approximately half a liter of water.
Remove chicken and broccoli from the pan after they are fully cooked.
Now the pan will have some fond stuck on it. Add the amaranth seeds into the pan. Stir in the masala into them. Using a ladle take some of that hot water and add it to the amaranth seeds. Cook on high heat and keep stirring. When the water has dried up, add another ladle of water. Keep doing this till you have exhausted all the water. The amaranth seeds would be fully cooked by then. Add butter, salt and pepper into the amaranth seeds. Mix well.
