Slice carrots and beetroot as thinly as possible.
Heat ghee, add cumin, mustard seeds, green chillies, chopped onion, ginger. Once it’s really hot add the vegetables. Mix well. Cover dish. Switch off the stove and let it sit till it cools off. Try to do the mix and cover up as quickly as you can.
